Bean Salad

High in fibre and healthy fats, give this hearty salad a try!
1 can garbanzo beans (chickpeas), drained
1 can kidney beans, drained
1 can black beans, drained
1/2 cup each chopped red onion, red pepper, celery
1/3 cup extra virgin olive oil
2/3 cup vinegar or apple cider vinegar
1/4 cup sugar or 1/4 tsp. of stevia powdered extract
1/4 tsp. pepper
1/2 tsp. salt

1. Combine beans, red onion, red pepper and celery in a large bowl.
2. In a separate bowl, whisk together oil, vinegar, sugar, salt, and pepper until sugar is dissolved; pour over the bean mixture.

Refrigerate 6 - 8 hours and enjoy!
