Vegan Mac and "Cheese"

Ingredients:

2 Cups elbow macaroni (gluten free or regular)

4 Tbsp vegan butter

4 Tbsp rice flour

½ Teaspoon salt

Dash of pepper

1 Cup almond milk

1 Cup shredded vegan cheese

Directions:

  1. Cook macaroni according to the box instructions.
  2. In a saucepan, melt vegan butter over medium heat, stir in flour and cook for 3-5 minutes stirring constantly. Add salt, pepper and milk, stir until mixture becomes thick.
  3. When mixture is thick, stir in cheese until fully melted.
  4. Drain macaroni and combine with cheese sauce, stir until macaroni is coated.
  5. Serve and enjoy!
