Coconut-Date Balls
Makes 12 balls.
Ingredients:
2 cups chewy dates, seeds removed
1 cup shredded coconut, approximately
Directions:

Place the dates and coconut in a food processor and process until a big ball forms. (Add additional coconut if the ball is slow in coming together. This means your dates are a bit moist for this recipe.)

Wet your hands and pinch off pieces from the big ball and roll them into small balls.
