Low Sodium Chicken and Rice Soup
Ingredients:
1 Tbsp extra-virgin olive oil
1 Medium white onion (chopped)
2 Large carrots (chopped)
2 Celery sticks (chopped)
Half of a red pepper (chopped)
2 Boxes of low sodium chicken broth (you can substitute if you want to make your own broth)
1 Cup water
1 Cup white rice
1 Cup shredded cooked chicken
1 Tsp Basil flakes
1 Tsp Parsley Flakes
Pinch of salt and pepper to taste
Directions:
Place a large pot on medium heat and add the olive oil. Add onion, carrots, celery, and red pepper. Cook for 5 minutes, until the vegetables are softened. Stir occasionally to avoid burning or browning of the vegetables.
Add the chicken broth and water to the pot and bring to a boil. Add in the rice, chicken, and seasonings.
Cook on medium heat for 20-30 minutes until the rice is tender.
